Here is a recipe I created on the fly this morn.  Total Yum! Enjoy!


Carrie’s Tropical Pineapple Smoothie


6 oz oj
6 oz mango keifer
1 cup frozen pineapple chunks
1 small frozen sliced banana
1 handful baby spinach
1/2 scoop whey protein
(depending on thickness you may need to add a couple ounces of water)

blend well and serve.

Zucchini Parmesan Crisps

I have been making an incredibly similar meal with Eggplant for years.


Zucchini Parmesan Crisps –
1 lb. zucchini or squash (about 2 medium-sized)
1/4 cup shredded parmesan (heaping)
1/4 cup Panko breadcrumbs (heaping)
1 tablespoon olive oil
1/4 teaspoon kosher salt
freshly ground pepper, to taste
Preheat oven to 400 degrees. Line two baking sheets with foil and spray lightly with vegetable spray.

Slice zucchini or squash into 1/4 inch-thick rounds. Toss rounds with oil, coating well.

In a wide bowl or plate, combine breadcrumbs, parmesan, salt and pepper.

Place rounds in parmesan-breadcrumb mixture, coating both sides of each round, pressing to adhere. The mixture will not completely cover each round, but provides a light coating on each side.

Place rounds in a single layer on baking sheets. Sprinkle any remaining breadcrumb mixture over the rounds.

Bake for about 22 to 27 minutes, until golden brown. (There is no need to flip them during baking — they crisp up on both sides as is.)

My son is 18, is it too late to sell him?

I say that in jest of course, well mostly 😉 lol

Here I am sitting on the couch in agony because my son is playing some hideous excuse for music. My flesh is crawling.  So I call out to him, “Zachary, your music is making your Mother die inside.” To which he replies “You know, all good things come at a price” So I naturally I think he is attempting to extort money out of me so I chuckle and say “I am not paying you to turn your music off.” The conversation ends with his reply of “No, I wasn’t offering to turn it off, I meant that my listening to good music comes at the price of your dying.”

Thanks son.  I feel the love.

4 Ingredient Sweet Garlic Chicken

Sweet Garlic Chicken –

4 Ingredients: Chicken, Garlic, Brown Sugar and Olive Oil. (measurements vary on taste )

Saute the Minced Garlic with the Olive Oil until soft, then remove from heat and stir in the Brown Sugar.

Pour that mix over the Chicken and Bake (uncovered) for 15-20 minutes at 450 🙂

Level Up! (insert Mario music)

I am starting today’s blog with a quote.  How wise Master Plato was.

I have been ruminating lately on progress.  It is so easy to forget how far you have come from the beginning.  This applies to everything in life really, but my focus is on  health and fitness.  I have been thinking back to when I would pull out my treadmill and “count” songs as the length of time I was on it.  Continually striving to jog  “one more tune”  Back then it was much more difficult to stay within my calorie range because I was trying to eat like the person I was shedding.  No worries, I figured out this didn’t work well.  Often along the way I have stumbled. I lost my mojo so many times I can’t place a numerical value on it. But my mind fought to stay in the game.  (get ready to groan, I am about to get all cliche on you) This truly is a lifestyle change and that takes time.  Set a goal, crush it and move on.  Get uncomfortable, push through it anyway and onto the next.

There is no room for excuses. You are not “too busy”, “too tired”, or “I want it so I am going to have it” allowed.  We do what is a priority. End of story.  This is a dirty game folks.  Commitment and perseverance is how you win. Push through old destructive thinking and behaviors and growing into a more informed an evolved human being is what gets the job done. Oh and did I mention that “it” never ends. That is why it is a lifestyle. It isn’t about losing some weight.  Anyone can do that part. Those “anyone’s” will put it back on.

I am very goal motivated.  Each time I do ANYTHING it is like  a mini competition with myself.  I love to kick my own ass, wait- what? 😉  I am constantly striving for more.  Each phase brings me to a new challenge.  It started with eating 5 freggies a day, exercising 3X a week etc. My current goal is/was to stop drinking soda pop.  Today marks one month without any of the poisonous bubbly goodness.  Woot! I feel like I am getting close to saving the Princess! 😉

So Level UP! What’s next on my list to conquer? I will tell you what-a half marathon.  Hey, go big or go home buddy! 😉 lol

Keep going people.  No matter what life throws at you, dust yourself off and keep going. No one can stand in your way except yourself. Don’t let the old you conquer who you are meant to become!

Know where the quote is from? Only the best movie ever made-duh! Still don’t know? Sheesh people, do you live under a rock? 😉 It is from The Princess Bride of course and spoken by my favorite character Indigo.  If you have never seen it you are missing out. Never gets old. It is my very favorite movie.

Anywhoo…..Onto business! I have had some eventful days since my last blog post.  But the most groundbreaking news is the non-scale victory I achieved yesterday. So that is what I will share with you.

I wanted to get some “extra” fitness in.  I was feeling frisky after  my planned treadmill time & my date with Chalene Johnson and her HIIT 25 + Stretch 10 classes. In light of my frisk-a-tude- (<–yes it is a word. I should know I just made it up! 😉 ), I decided that I would pull out one of my older circuit training workouts. For any of you that know Jillian Michaels, she is kind of a beast. I mean that in the best possible way. I love her. Although you wouldn’t know this if you heard the way I cuss at her, but I digress 😉 I did one of her least difficult workouts that I own on it’s most advance level.

I chose Level 3 of  the 30 Day Shred.  Now I say least difficult but that doesn’t mean easy by any stretch of the imagination. It is tough. Only yesterday it was easy! Whaaa? After a 2.5 mile walk, after Chalene’s HIIT class, Jillian was easy? Yeah buddy! I might not be losing all of the weight I want (damn fork keeps putting bad food into my face…gotta remember to throw that naughty fork away 😛 ) but I am advancing and my fitness level is improving!

Score baby. Total non-scale victory!

Keep at it! This fitness stuff really works 😉 lol

Artichoke-Parmesan Stuffed Tilapia


  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 thin (5-ounce) tilapia fillets
  • 1 (6-ounce) jar water-packed marinated artichokes, drained and chopped
  • 1 slice whole-grain bread, cubed
  • 1 tablespoon grated Parmesan cheese
  • 1/2 teaspoon dried oregano
  • 2 teaspoons olive oil
  • 4 teaspoons chopped fresh parsley

Preheat oven to 375°. Sprinkle salt and pepper over both sides of tilapia fillets; set aside. Combine artichokes, bread cubes, Parmesan cheese, and oregano in a medium bowl; mix well. Brush each fillet with 1/2 teaspoon olive oil; top with 1/4 of the artichoke mixture. Bake until fish pulls apart easily with a fork (about 15 minutes). Sprinkle each serving with 1 teaspoon chopped fresh parsley just before serving.

A little Yummy, a little Motivation

Crushed almonds, pecans, and pine nuts make a perfect crunchy breading for chicken and fish fillets. Way healthier than bread crumbs!

I am definitely going to have to try that. It sounds wonderful.

I do not have a lot to say today.  I had an excruciatingly busy weekend.  Therefore I am too tired to be witty 😉 (I can hear you thinking “When was she ever witty?” lol )

This is me today as I reminisce  about yesterday.  I am not one to beat myself up over a poor choice or two.  I am not a cyborg after all. lol But there was no reason for yesterday and I am feeling the sting of “buyers remorse.”  I should have known I was doomed when I treated myself to a donut AFTER breakfast.  It was all downhill from there baby.  Actually it was more like an avalanche that barrels down a mountain side and demolishes a small Himalayan village but I digress.

Today my bloated tummy and I will be looking at food with a certain disdain and we will be eating clean.

Choose wisely my friends.  Don’t join Bugs and I.  We are stupid. LOL 😉

Salivation :)

No no not Salvation…Salivation I made something so tastylicious that I felt compelled to share it with you 🙂

OH MAN! I love me some Shakeology and I have made a few splendid combinations but this last one is my fave so far. 1c unsweetened chocolate almond milk, 1c frozen strawberries, 1T peanut butter and one scoop Chocolate Shakeology. My mouth is watering as I type! You should try it!

So good!
